Pomace
Grappa is a grape-based pomace brandy of Italian origin. After the grapes are pressed, the remaining skins, pulp, seeds and stems which are referred to as pomace are distilled and fermented to make the liquor. There are similar styles of liquor across the region, but it must be produced in Italy, San Marino or the Italian part of Switzerland in order for it to be considered grappa.
